JERKED PORK CHOPS with Pineapple
- 4 pork chops, about 1/2 to 3/4 inch thick
- 2 TBS DARK FIRE Jamaican Jerk Spice
- 1 TBS olive oil
- 1 can pineapple rings, drained or fresh pineapple cut into rings
Mix DARK FIRE Jamaican Jerk Spice with olive oil to make a paste.
Place pork chops in shallow roasting pan and rub all over with Jerk paste. Cover and refrigerate for at least 2 hours or overnight.
Preheat the broiler to high. Place the chops on broiler pan and broil
for 6-10 minutes on each side. Add the pineapple slices to the broiler pan for the last 2 minutes of broiling, lightly caramelize
on each side. Remove pork & pineapple from oven. Place a slice of pineapple on each pork chop and serve immediately
with mashed potoes or rice & peas.
