IKO-IKO Chick Peas with Spinach
This is an easy, nutritious and delicious meal.
INGREDIENTS:
- 2 15oz cans Chick Peas (Garbanzo beans), drained
- 2 TBS IKO-IKO Spice Rub
- 1 10oz. package frozen chopped spinach, thawed (or 1 lb fresh spinach,
chopped)
- 2 hard-boiled eggs, peeled and sliced
- 2-3 TBS olive oil
In large saute' pan, add 2 TBS olive oil and heat to med-high, add Chick
Peas, stir for about 2 minutes, or until warmed, add IKO-IKO, stir well until chick peas are fully coated
with spice rub. Add a splash of water or oil if needed to coat.
Meanwhile, heat spinach in small sauce pan, just until hot, about five
minutes. When spinach is hot, arrange around outside of plate, spoon chick peas into center of plate and top with slices of
hard-boiled egg. Sprinkle with salt or IKO-IKO to taste. Enjoy as is, or serve with brown rice or roasted
potatoes.
**For fun and easy variations, substitute your favorite vegetable for
the spinach, broccoli works great, try kale or any other leafy green vegetable. Spicy Chick Peas also work
great as a cold salad with peppers, onions, radishes...
