NEW ORLEANS-STYLE SPICY SHRIMP
INGREDIENTS:
- 2 TBS IKO-IKO Spice Rub (use more if you like it spicy!)
- 1 pound large shrimp, cleaned and de-veined
- 3 TBS. olive oil
- Lemon juice (optional)
DIRECTIONS:
In a medium bowl, toss shrimp with 1 TBS olive oil and sprinkle with
IKO-IKO Spice Rub to coat completely. Let sit for 10-15 minutes to allow flavors to meld. Heat remaining 2 TBS
olive oil to med-high heat in large cast iron or stainless steel pan. Add shrimp and stir, cook for about 4-6 minutes
or until shrimp are pink and firm. Squirt with lemon juice and serve immediately.
**To enjoy this recipe as a complete meal, add one red pepper and one
bunch of broccoli tops, cut into bite sized pieces. Saute' in olive oil over medium-high heat for approx. 5 minutes,
add shrimp, cook 5-6 minutes longer, stirring occasionally. Squirt with lemon and serve over white or brown rice.
