“Perfect” Chicken Wings
- 3 pounds chicken wings (about 25 wings)
- 2-3 TBS PERFECT RIB RUB
- 1/3 cup soy sauce or tamari
- 1 TBS cider or white wine vinegar
Place wings in large zip-lock bag or plastic container with tight fitting
lid. Pour soy sauce & vinegar over wings, mix well to coat. Shake on RIB RUB a little at
a time, mixing well, make sure all wings are fully coated. Seal bag or container and refrigerate for at least 20 minutes,
(overnight is great!), shake once in a while.
Adjust oven rack to second highest position (about 6 inches from upper
element), pre-heat oven to 375 degrees.
Place wings on larger broiler pan or cookie sheet; sprinkle RIB
RUB to coat lightly, put pan in oven.
Pour remaining marinade in small saucepan, simmer for 10-15 minutes while
wings are cooking. Bake wings for 20 minutes, turn wings, bake 20 minutes on other side, flip wings to skin-side up,
baste with remaining marinade, turn oven to broil. Broil 2-3 minutes until lightly browned and sauce is bubbling. Watch
carefully during broiling, they can burn. Transfer to serving platter. Enjoy!
