Perfect Baked Beans

PERFECT BAKED BEANS
 
This is the perfect accompaniment to the Perfect Baby Back Rib recipe.
6-8 servings
  • 1 pound dried Great Northern beans *(see below for faster recipe)
  • 1/3 cup PERFECT RIB RUB
  • 1/4 cup tomato paste
  • 1/2  pound bacon, chopped
  • 1 medium onion, chopped
  • 1/4 cup molasses
  • 1/3 cup brown sugar (or more to taste)
  • 1/4 cup ketchup
  • Vegetable broth

Soak beans overnight in just enough cold water to submerge them completely.
Pre-heat oven to 250 degrees F.
Cook the bacon over medium heat in a cast iron Dutch oven, stir in onions, cook until enough fat has rendered from the bacon to soften the onions, about 8 minutes. Stir in the tomato paste, ketchup, brown sugar and molasses.

Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups. Add the liquid to the Dutch oven and bring to a boil over med-high heat. Add RIB RUB, stir well, cover and cook in the oven for 6 to 7 hours, or until the beans are tender.

   *FASTER BAKED BEANS

 • 4 -16oz cans Great Northern or white beans- drain, reserve 1 cup of liquid
 • 1/3 cup PERFECT RIB RUB
 • ½  pound bacon, chopped   
 • 1 medium onion, chopped   
 • 1/4 cup molasses
 • 1/3 cup brown sugar (or more to taste)
 • 1/4 cup tomato paste
 • 1/4 cup ketchup
 Pre-heat oven to 250 degrees F.
 In a large pot of cast iron Dutch oven- cook the bacon over medium heat, stir in onions, cook until enough fat has rendered from the bacon to soften the onions, about 8 minutes. Stir in the RIB RUB, tomato paste, ketchup, brown sugar and molasses.  Drain the beans and reserve the soaking liquid.  Add the drained beans and mix well- transfer (if necessary) to large casserole dish and bake covered for one hour, or until beans begin to soften.
