Jerk Chicken Salad
This is a great way to use up leftover chicken! This also works
well with canned tuna or salmon for a nice summer meal.
- 2 cups cooked chicken, chopped into small pieces
- 1-2 TBS DARK FIRE (or to taste)
- 2 TBS mayonnaise
- 1 sour dill pickle, chopped
- 1 rib of celery, chopped
- 1 small onion chopped
- Pineapple or mango, chopped to garnish (optional)
In medium bowl, mix DARK FIRE with mayonnaise, add onions,
celery, pickles and chicken, stir well. Serve on a bed of greens or your favorite sandwich bread, top with chopped mango
or pineappple if desired.
**Other fun additions include: chopped apple, bell pepper, green olives,
capers, cucumber, radish...
