"JERKED" FISH
This is an excellent recipe for fish that is quick and easy, but even
better, is delicious! Use any firm-fleshed fish, such as salmon, red snapper, bluefish, sea bass... whatever you like.
- 1 TBS DARK FIRE JAMAICAN JERK SEASONING
- 4 Fish fillets (2-2 1/2 pounds total)
Garnish with a squeeze of fresh lime or a dollup of sour cream
Pre-heat grill or broiler to med-high. Massage the jerk seasoning into the fish and allow to set for a few minutes
(10-15 minutes while you heat the grill or oven is fine). Place on grill or under broiler for 4-6 minutes each side.
Let the seasonings get crispy, but do not overcook the fish. Serve immediately with rice & beans and sliced avocado
if desired. 4 servings.
